A half day cookery course in the medina, the heart of Marrakech. Learn the art of making a tagine, brewing the perfect mint tea, or try your hand at crafting the perfect pastilla. Then, at the end of this hands on workshop, enjoy the fruits of your labours and eat you way through your creations!
Food in Morocco plays a very important part in traditional life. From weddings, to baptisms and circumcisions meals form the basis of social gatherings and celebrations. From tagines and cous cous, to the more delicate Pastillas, the aromas and delicate flavours can be attributed to mother nature and the plethora of locally grown herbs, spices and vegetables. With no alcohol being served in the country, mint tea is the nations favourite drink, although freshly squeezed fruit juice comes in as a close second.
Your cookery class will start with an introduction to Moroccan cuisine and the part it plays in society. Your teacher will talk you through the various spices and ingredients traditionally used and will also explain how different dishes are prepared. Depending on your location - some of the classes are in the medina some are just outside of Marrakech - you may visit a local spice shop to taste and smell the different spices used in traditional and modern kitchens across Morocco.
Back in the kitchen, all of the ingredients will have been laid out for you. Every participant is given an apron, utensils and ingredients to use and the cookery teacher stands at the head of the table demonstrating how to prepare and cook the meal. The atmosphere is informal and participants are encouraged to ask as many questions as they like. Cooking will last about an hour after which the class sits down to together to enjoy the meals they have all just created.
What you actually cook on the day can vary, usually the first people to book on to a workshop decide on the dish for the group to cook.
The classes are run daily and there is a maximum of 10 - 12 people on each course. You can request a particular dish for a class, but usually the first people booked onto a course will set the agenda for a group. Please specify at the time of booking whether you have any preferences and they will try to accommodate you.

Thoroughly enjoyed my half-day cookery course at Maison Arabe. I'd signed up because I thought it would be fun to learn a bit about Moroccan cooking, but it was a real bonus that it was held at Maison Arabe, which is a really beautiful place. We were 10 in the group altogether, so plenty of attention for everyone from our instructor, Mohammed. He first took us to a local spice shop and we were shown which were the spices most used in local cooking. Then we came back to the kitchen, which had been beautifully laid out, with individual utensils, aprons and ingredients. Cooked a truly magnificent chicken tagine with accompanying salads and then had the pleasure of eating it, served by the staff at Maison Arabe - great. And after all that, we got to take our tagine pot and recipe sheets away with us! A really enjoyable half day in Marrakech and a fun way of learning a bit about local food into the bargain - so glad I did it!
